Dragon Fruit Jelly Mooncake Recipe

Mooncake festival is around the corner. This will be my first attempt in making jelly mooncakes. However, the outcome seems satisfying for me. I found that the mooncake jelly was quite easy to do, and the ingredients was simple and easy to find. I believe that everyone can make their own mooncake jelly too. Here is the recipe...

Ingredient (10 jelly mooncakes) :

For inner filling,
(A)
200g                                 Dragon fruit 
250ml                               Water 
60g                                     Sugar
1 tablespoon                  Agar-agar powder 
1 teaspoon                      Instant Jelly powder
(B) 
100ml                               Coconut milk
100ml                               Fresh milk
For mooncake skin, 
300g                                  Dragon fruit 
750ml                               Water 
110g                                   Sugar 
3 tablespoons                Agar-agar powder
3/4 tablespoons           Instant Jelly powder


Method: 
For the filling,
1. Mash/blend the dragon fruit until it become purée flesh. Combine it with the rest of ingredients filling (A).
2. Bring to a boil and add in ingredient (B). Keep on stirring until it boils again.
3. Then pour the filling mixture into the moulds till almost full (depends on the size of your mould).
4. Leave them cool to set, dislodge then only proceed to make skin.
5. Remove the filling from its mould and scratch the surface of the filling with fork so that it can stick together with the skin.

#3 For the filling, make sure the mould that you use is smaller than your jelly mould.


For the mooncake skin,
1. Again, mash/blend the dragon fruit until it become purée flesh.
2. Combine all the ingredients together and cook it until it boils.
3. Then pour the skin mixture into the plastic jelly mould to 1/3 only.
4. Let them cool for awhile, then place the filling jelly in the centre of each jelly mould.
5. Continue by pour the remaining mixture into the mould until the filling is covered.
6. Leave them to set, keep chilled.

    May I know what is the different between instant jelly powder and agar agar powder? They are not the same ?

  4. Hi Maxine! Basically the diff between both powders was the texture. Konyaku jelly has the resilient and springy texture, whereas agar agar is firmer and non springy. Hope that helps! :)

  5. Hi there. I just made it last night. Was really disappointed with the texture, I was too hard, I think need to adjust the agar agar powder to slightly lesser. My kids doesn't like it too. :(

    1. Hi Jesslyn! Sry about that. Mayb you can adjust the ingredient by adding more of jelly powder instead of agar agar powder. As the agar powder will harden the texture.

  6. Hi I would like to double confirm with the ingredients for the mooncake skin, is it 3 or 4 tablespoons of instant jelly powder instead of teaspoons?

    1. Hi Christina, I think u can try to search the molds in eBay? For the clear one, Use pure konyaku jelly powder and decorate it with fresh fruits. It should be pretty too.

    1. Hi Nancy! Nope. The colour came from the dragon fruit itself. I'm afraid coconut milk might affect the taste and make it too strong. But still you can try it out. ;)

    1. You can try dividing the ingredient by half and the leftover can put in normal container. Hope that helps.

  12. Jus wan to confirm wt you. Is your recepi above is for make 10 mooncakes? U use small mould or big mould? Wat kind of mould you use?

    1. Ya 10 standard size mooncakes. The mooncake mould size is the standard big one we seen in the market. Whereas for the inner part, I used the cupcakes mould. You can use any container. Just make sure that it's smaller and can fit inside the mooncake mould

    1. Hi! You should prepare the (A) first and set it aside to harden. The agar powder ingredient is the key point for it to become harden. For my recipe, I use the mermaid brand agar powder. :)

    1. Hi Siewching! Ya you may try using coconut milk. For the sugar, I think it will affect the texture and don't worry it won't be too sweet.
